Makhana isn't grown in fields — it's harvested from the still ponds and wetlands of North Bihar's Mithila region, where farmers have cultivated the prickly water lily for generations, diving into the water by hand to gather its seeds before they're sun-dried, roasted, and popped into the crunchy fox nuts you know.
Bihar produces roughly 85–90% of India's entire makhana output — and in 2022, "Mithila Makhana" earned a Geographical Indication (GI) tag, formally recognising it as a product tied to this specific soil and water.
