Chili achar follows the same Bihari pickling tradition as our mango achar — chillies washed, sun-dried to remove moisture, then mixed with mustard oil and mustard seed powder before being left to mature in the sun.
Bihari achar leans harder into mustard oil and mustard seed than pickles from most other regions — a deliberately pungent, sharp style, not a mellow one.
